Ingredients:

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 medium carrots, diced
  • 1 can diced tomatoes, undrained
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh spinach or kale, roughly chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the Italian sausage, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
  3. Add chopped onion and sauté until translucent, about 3 minutes.
  4. Stir in minced garlic, chopped bell pepper, and diced carrots; cook for another 2 minutes.
  5. Stir in diced tomatoes (with juice) and chicken broth. Bring to a simmer.
  6. Add Italian seasoning and season with salt and pepper to taste. Simmer for 10 minutes.
  7. Stir in heavy cream until combined.
  8. Add chopped spinach or kale and simmer for an additional 3-5 minutes until greens are wilted.
  9. Ladle the soup into bowls and sprinkle with grated Parmesan cheese, if desired.
