Ingredients:
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium bell pepper, chopped
- 2 medium carrots, diced
- 1 can diced tomatoes, undrained
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups fresh spinach or kale, roughly chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese, for serving (optional)
Instructions:
- In a large pot, heat the olive oil over medium heat.
- Add the Italian sausage, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
- Add chopped onion and sauté until translucent, about 3 minutes.
- Stir in minced garlic, chopped bell pepper, and diced carrots; cook for another 2 minutes.
- Stir in diced tomatoes (with juice) and chicken broth. Bring to a simmer.
- Add Italian seasoning and season with salt and pepper to taste. Simmer for 10 minutes.
- Stir in heavy cream until combined.
- Add chopped spinach or kale and simmer for an additional 3-5 minutes until greens are wilted.
- Ladle the soup into bowls and sprinkle with grated Parmesan cheese, if desired.
