Ingredients:
- 2 cups (300g) ripe tomatoes, diced
- 1/4 cup (60ml) extra-virgin olive oil
- 2 cloves garlic, minced
- 1/4 cup (10g) fresh basil, finely chopped
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1 tablespoon balsamic vinegar (optional)
- 1 French baguette or ciabatta, sliced into ½-inch thick slices
Instructions:
- In a mixing bowl, combine diced tomatoes, minced garlic, and chopped basil. Drizzle with olive oil, add salt, pepper, and balsamic vinegar, if using. Mix well and set aside to allow flavors to meld for about 10 minutes.
- Preheat the grill or set the oven to broil. Arrange the bread slices on a baking sheet. Brush one side lightly with olive oil. Toast for about 5-7 minutes, flipping halfway through until golden and crispy.
- Spoon the tomato mixture onto the toasted side of the bread slices. Serve immediately, drizzled with a little more olive oil if desired.
