Ingredients:
- 4 large ripe tomatoes, diced
- 1/4 cup extra virgin olive oil
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, chopped
- Salt and pepper, to taste
- 1 tablespoon balsamic vinegar
- 1 French baguette, sliced
- 1/4 cup extra virgin olive oil for brushing
- Balsamic glaze for garnish
Instructions:
- Combine diced tomatoes, minced garlic, and chopped basil in a mixing bowl. Drizzle with olive oil, balsamic vinegar, and season with salt and pepper. Mix gently and set aside.
- Preheat the grill pan or oven to 400°F (200°C). Slice the French baguette into 1/2-inch thick pieces and brush each slice lightly with olive oil on both sides.
- Toast the bread slices on a baking sheet or grill pan in the oven for 5-7 minutes until golden brown and crispy.
- Remove toasted bread and spoon the tomato mixture generously on top of each slice.
- Drizzle balsamic glaze over assembled bruschetta and serve immediately for best freshness.
