Ingredients:
- 2 cups (250g) all-purpose flour
- ¾ cup (180ml) boiling water
- Pinch of salt
- 1 lb (450g) ground pork
- ½ cup (15g) fresh chives, finely chopped
- 1 tbsp (15ml) soy sauce
- 1 tbsp (15ml) sesame oil
- 1 tsp (5g) fresh ginger, minced
- 2 cloves garlic, minced
- 1 tsp (5g) sugar
- Pinch of black pepper
- 2 tbsp (30ml) vegetable oil
- Soy sauce and vinegar (for serving)
Instructions:
- In a bowl, combine flour and salt. Gradually add boiling water, stirring until a shaggy dough forms. Knead for about 5 minutes until smooth. Let rest for 30 minutes.
- In a large bowl, mix ground pork, chives, soy sauce, sesame oil, ginger, garlic, sugar, and black pepper until well combined.
- Divide the rested dough into small pieces. Roll each into a thin circle. Place a teaspoon of filling in the center, fold, and pinch to seal.
- Arrange dumplings in a steamer in a single layer. Steam for 10 minutes until the filling is cooked.
- Heat vegetable oil in a skillet over medium heat. Add steamed dumplings and fry until bottoms are golden brown, about 5 minutes.
