Ingredients:
- 2 cups (400g) Granulated Sugar
- ½ cup (115g) Unsalted Butter (1 stick), cut into pieces
- ½ cup (120ml) Whole Milk
- ¼ cup (65g) Unsweetened Cocoa Powder
- ½ cup (130g) Creamy Peanut Butter
- 1 teaspoon (5ml) Vanilla Extract
- 3 cups (270g) Quick-Cooking Oats (not instant)
- Pinch of Sea Salt (about 1/8 teaspoon)
Instructions:
- In a large saucepan, combine sugar, butter, milk, and cocoa powder.
- Over medium heat, bring the mixture to a rolling boil, stirring constantly. Once boiling, reduce heat slightly but maintain the boil for 1 minute.
- Remove the saucepan from the heat and stir in peanut butter and vanilla extract until fully incorporated.
- Quickly stir in the oats and salt, ensuring they are evenly coated in the chocolate-peanut butter mixture.
- Using a cookie scoop or a spoon, drop rounded spoonfuls of the mixture onto the prepared baking sheet.
- Let the cookies cool completely at room temperature until firm. This usually takes 30-60 minutes.
