Ingredients:

  • 2 cups (400g) Granulated Sugar
  • ½ cup (115g) Unsalted Butter (1 stick), cut into pieces
  • ½ cup (120ml) Whole Milk
  • ¼ cup (65g) Unsweetened Cocoa Powder
  • ½ cup (130g) Creamy Peanut Butter
  • 1 teaspoon (5ml) Vanilla Extract
  • 3 cups (270g) Quick-Cooking Oats (not instant)
  • Pinch of Sea Salt (about 1/8 teaspoon)

Instructions:

  1. In a large saucepan, combine sugar, butter, milk, and cocoa powder.
  2. Over medium heat, bring the mixture to a rolling boil, stirring constantly. Once boiling, reduce heat slightly but maintain the boil for 1 minute.
  3. Remove the saucepan from the heat and stir in peanut butter and vanilla extract until fully incorporated.
  4. Quickly stir in the oats and salt, ensuring they are evenly coated in the chocolate-peanut butter mixture.
  5. Using a cookie scoop or a spoon, drop rounded spoonfuls of the mixture onto the prepared baking sheet.
  6. Let the cookies cool completely at room temperature until firm. This usually takes 30-60 minutes.
  7. Once set, serve and enjoy your no-bake oatmeal cookies!
