Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, chilled and diced
  • 6-8 tablespoons ice water
  • 6 cups peeled and sliced apples
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons lemon juice
  • 1 tablespoon unsalted butter (optional)

Instructions:

  1. In a large mixing bowl, whisk together flour, salt, and sugar.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Stir in ice water, one tablespoon at a time, until dough holds together.
  4. Divide dough into two equal portions, shape into discs, wrap in plastic, and chill for at least 30 minutes.
  5. In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice.
  6. Toss until apples are evenly coated; let sit for 10 minutes.
  7. Preheat the oven to 425°F (220°C).
  8. Roll out one disc of dough on a floured surface to fit the pie dish.
  9. Place the bottom crust in the pie dish, pressing it against the sides.
  10. Pour in the apple filling and dot with butter, if desired.
  11. Roll out the second dough disc; place over the filling. Seal and flute the pie edges.
  12. Cut slits in the top crust for steam to escape.
  13. Place the pie on a baking sheet to catch any drips.
  14. Bake in the preheated oven for 40-50 minutes or until the crust is golden brown and the filling bubbles.
  15. Cool for at least 2 hours before serving.
