Ingredients:

  • 1 package (10 ounces/283g) frozen chopped spinach, thawed and squeezed dry
  • 1 cup (227g) sour cream
  • 1 cup (227g) mayonnaise
  • 1 package (8 ounces/226g) cream cheese, softened
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/4 cup (30g) finely chopped onion
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional, but highly recommended)

Instructions:

  1. Thaw the frozen spinach completely. Squeeze out as much excess water as possible.
  2. In a large mixing bowl, combine the sour cream, mayonnaise, cream cheese, Parmesan cheese, onion, garlic, salt, pepper, and nutmeg (if using).
  3. Add the squeezed-dry spinach to the bowl and mix well until all ingredients are thoroughly combined.
  4. If baking, transfer the spinach dip to a baking dish. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until heated through and bubbly around the edges.
  5. If serving cold, cover the bowl and chill in the refrigerator for at least 30 minutes to allow the flavours to meld. Serve with tortilla chips, crackers, raw vegetables, or in a hollowed-out sourdough bread bowl.
