Ingredients:
- 1 cup (225g) Full-Fat Cottage Cheese
- 1 medium Ripe Banana (for blending)
- 1 heaped tablespoon (10g) Unsweetened Cocoa Powder
- 1/2 teaspoon Vanilla Extract
- 1 teaspoon Sweetener (Maple Syrup or Honey, to taste)
- Pinch of Salt
- 1 ounce (28g) Dark Chocolate (70% Cacao or higher), melted
- 1/2 medium Fresh Banana, sliced (for topping)
- 1 tablespoon Chopped walnuts, pecans, or toasted oats (optional crunch)
Instructions:
- Place the dark chocolate in a small microwave-safe bowl. Melt gently in 15-second intervals, stirring between each, until smooth. Set aside to cool slightly.
- Assemble the base: Place the cottage cheese, the first banana (for blending), cocoa powder, vanilla extract, sweetener (if using), and salt into a food processor or high-powered blender.
- Blend until the mixture is completely smooth and homogenous, scraping down the sides as necessary. Taste and add more sweetener if desired.
- Portion the smooth, chocolatey mixture into your serving bowl.
- Create the swirl: Drizzle about two-thirds of the melted dark chocolate over the top of the base. Use a knife or skewer to gently swirl it into the surface for a marbled effect.
- Garnish: Arrange the fresh banana slices neatly on top. Sprinkle with the remaining melted chocolate drizzle and your optional crunch element (nuts or oats).
- Serve immediately, nice and cold.
