Ingredients:

  • 1 cup (225g) Full-Fat Cottage Cheese
  • 1 medium Ripe Banana (for blending)
  • 1 heaped tablespoon (10g) Unsweetened Cocoa Powder
  • 1/2 teaspoon Vanilla Extract
  • 1 teaspoon Sweetener (Maple Syrup or Honey, to taste)
  • Pinch of Salt
  • 1 ounce (28g) Dark Chocolate (70% Cacao or higher), melted
  • 1/2 medium Fresh Banana, sliced (for topping)
  • 1 tablespoon Chopped walnuts, pecans, or toasted oats (optional crunch)

Instructions:

  1. Place the dark chocolate in a small microwave-safe bowl. Melt gently in 15-second intervals, stirring between each, until smooth. Set aside to cool slightly.
  2. Assemble the base: Place the cottage cheese, the first banana (for blending), cocoa powder, vanilla extract, sweetener (if using), and salt into a food processor or high-powered blender.
  3. Blend until the mixture is completely smooth and homogenous, scraping down the sides as necessary. Taste and add more sweetener if desired.
  4. Portion the smooth, chocolatey mixture into your serving bowl.
  5. Create the swirl: Drizzle about two-thirds of the melted dark chocolate over the top of the base. Use a knife or skewer to gently swirl it into the surface for a marbled effect.
  6. Garnish: Arrange the fresh banana slices neatly on top. Sprinkle with the remaining melted chocolate drizzle and your optional crunch element (nuts or oats).
  7. Serve immediately, nice and cold.
