Ingredients:

  • 1 cup (240ml) Mayonnaise
  • 1-2 Chipotle Peppers in Adobo Sauce, finely minced
  • 1-2 teaspoons Adobo Sauce
  • 2 cloves Garlic, minced
  • 1 tablespoon (15ml) Lime Juice, freshly squeezed
  • 1/4 teaspoon (1.5ml) Smoked Paprika
  • 1/4 teaspoon (1.5ml) Salt
  • 1/8 teaspoon (0.75ml) Black Pepper, freshly ground

Instructions:

  1. Finely mince the chipotle peppers and garlic.
  2. In a mixing bowl (or food processor), add the mayonnaise, minced chipotle peppers, adobo sauce, minced garlic, lime juice, smoked paprika, salt, and pepper.
  3. Whisk vigorously (or process in the food processor) until all ingredients are thoroughly combined and the mixture is smooth.
  4. Taste the chipotle aioli and adjust seasoning as needed. Add more chipotle for heat, lime juice for tang, or salt to taste.
  5. Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled with your favorite foods.
