Ingredients:
- 1 cup (240ml) Mayonnaise
- 1-2 Chipotle Peppers in Adobo Sauce, finely minced
- 1-2 teaspoons Adobo Sauce
- 2 cloves Garlic, minced
- 1 tablespoon (15ml) Lime Juice, freshly squeezed
- 1/4 teaspoon (1.5ml) Smoked Paprika
- 1/4 teaspoon (1.5ml) Salt
- 1/8 teaspoon (0.75ml) Black Pepper, freshly ground
Instructions:
- Finely mince the chipotle peppers and garlic.
- In a mixing bowl (or food processor), add the mayonnaise, minced chipotle peppers, adobo sauce, minced garlic, lime juice, smoked paprika, salt, and pepper.
- Whisk vigorously (or process in the food processor) until all ingredients are thoroughly combined and the mixture is smooth.
- Taste the chipotle aioli and adjust seasoning as needed. Add more chipotle for heat, lime juice for tang, or salt to taste.
- Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled with your favorite foods.
