Ingredients:
- 1 lb (450g) boneless, skinless chicken breasts, diced into 1-inch cubes
- 2 tablespoons (30ml) olive oil
- 1 teaspoon garlic powder (5ml)
- 1 teaspoon onion powder (5ml)
- 1 teaspoon paprika (5ml)
- 1 teaspoon ground cumin (5ml)
- Salt and freshly ground black pepper, to taste
- 2 cups (400g) cooked rice (basmati, jasmine, or your favorite)
- 1 cup (150g) cherry tomatoes, halved
- 1 cucumber, diced
- 1 cup (100g) shredded lettuce (Romaine or butter lettuce work well)
- ½ cup (120ml) tzatziki sauce (store-bought or homemade)
Instructions:
- In a mixing bowl, combine the diced chicken with olive oil, garlic powder, onion powder, paprika, cumin, salt, and pepper. Toss to coat evenly.
- Heat the skillet over medium heat. Add the marinated chicken and cook, stirring occasionally, until fully cooked through and no longer pink inside (internal temperature of 165°F/74°C). This should take about 8-10 minutes.
- Divide the cooked rice among four serving bowls.
- Layer the cooked chicken, halved cherry tomatoes, diced cucumber, and shredded lettuce over the rice.
- Generously drizzle tzatziki sauce over each bowl.
