Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts, diced into 1-inch cubes
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon garlic powder (5ml)
  • 1 teaspoon onion powder (5ml)
  • 1 teaspoon paprika (5ml)
  • 1 teaspoon ground cumin (5ml)
  • Salt and freshly ground black pepper, to taste
  • 2 cups (400g) cooked rice (basmati, jasmine, or your favorite)
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup (100g) shredded lettuce (Romaine or butter lettuce work well)
  • ½ cup (120ml) tzatziki sauce (store-bought or homemade)

Instructions:

  1. In a mixing bowl, combine the diced chicken with olive oil, garlic powder, onion powder, paprika, cumin, salt, and pepper. Toss to coat evenly.
  2. Heat the skillet over medium heat. Add the marinated chicken and cook, stirring occasionally, until fully cooked through and no longer pink inside (internal temperature of 165°F/74°C). This should take about 8-10 minutes.
  3. Divide the cooked rice among four serving bowls.
  4. Layer the cooked chicken, halved cherry tomatoes, diced cucumber, and shredded lettuce over the rice.
  5. Generously drizzle tzatziki sauce over each bowl.
