Ingredients:
- 1 cup (227g) unsalted butter, softened
- 1 cup (200g) packed brown sugar
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (2g) salt
- 3 cups (240g) rolled oats
- 1 cup (170g) semisweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C).
- In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Mix in eggs one at a time, then add vanilla extract, until well combined.
- Whisk together flour, baking soda, and salt in a separate bowl. Gradually add to wet mixture.
- Fold in rolled oats and chocolate chips until evenly distributed.
- Cover dough with plastic wrap and chill in refrigerator for 30 minutes.
- Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper. Bake for 12-15 minutes until edges are golden.
- Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
