Ingredients:
- 1 cup (226g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 3/4 cup (165g) packed light brown sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1/2 teaspoon (3g) salt
- 1 cup (170g) butterscotch chips
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-5 minutes).
- Gradually beat in the eggs one at a time, then add the vanilla extract until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to over-mix.
- Gently fold in the butterscotch chips using a spatula.
- Use a cookie scoop or spoon to portion dough onto baking sheets lined with parchment paper, leaving about 2 inches between cookies.
- Bake in the preheated oven for 10-12 minutes or until lightly golden brown around the edges. The centers will appear soft.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
