Ingredients:

  • 1 ½ cups (150 g) graham cracker crumbs
  • ½ cup (113 g) unsalted butter, melted
  • 2 tablespoons (25 g) granulated sugar
  • 16 oz (450 g) cream cheese, softened
  • 1 cup (120 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups (480 ml) heavy whipped cream
  • 2 cups (300 g) cherry pie filling (canned or homemade)
  • Fresh cherries, for garnish (optional)

Instructions:

  1. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of the springform pan to form an even layer.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Gradually mix in powdered sugar and vanilla extract until well combined.
  3. In another bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture using a rubber spatula.
  4. Spread half of the creamy mixture evenly over the graham cracker crust. Layer half of the cherry pie filling on top of the cream layer.
  5. Repeat with the remaining cream mixture and cherry pie filling.
  6. Cover the dessert with plastic wrap and refrigerate for at least 30 minutes until set.
  7. Carefully remove from the springform pan. Garnish with fresh cherries if desired. Slice and serve chilled.
