Ingredients:

  • 6 medium bell peppers, diced
  • 1 lb ground turkey or beef
  • 1 cup uncooked rice
  • 2 cups chicken broth or vegetable broth
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp paprika
  • Salt to taste
  • Pepper to taste
  • 2 cups shredded cheese

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of oil over medium heat. Add chopped onions and cook until soft, about 5 minutes. Add minced garlic and sauté for an additional minute.
  3. Add ground turkey or beef, breaking it up with a spoon, and cook until browned. Drain any excess fat if necessary.
  4. Stir in rice, diced tomatoes, corn, chicken broth, oregano, basil, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for approximately 15 minutes, or until rice is tender and liquid is absorbed.
  6. Gently fold in the diced bell peppers, ensuring they are evenly distributed.
  7. Pour the mixture into a greased baking dish and spread evenly. Top with shredded cheese.
  8. Cover with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes, or until cheese is melted and bubbly.
  9. Let it cool for a few minutes before serving. Garnish with fresh herbs if using.
