Ingredients:
- 6 medium bell peppers, diced
- 1 lb ground turkey or beef
- 1 cup uncooked rice
- 2 cups chicken broth or vegetable broth
- 1 can diced tomatoes
- 1 cup corn
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp paprika
- Salt to taste
- Pepper to taste
- 2 cups shredded cheese
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat a drizzle of oil over medium heat. Add chopped onions and cook until soft, about 5 minutes. Add minced garlic and sauté for an additional minute.
- Add ground turkey or beef, breaking it up with a spoon, and cook until browned. Drain any excess fat if necessary.
- Stir in rice, diced tomatoes, corn, chicken broth, oregano, basil, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for approximately 15 minutes, or until rice is tender and liquid is absorbed.
- Gently fold in the diced bell peppers, ensuring they are evenly distributed.
- Pour the mixture into a greased baking dish and spread evenly. Top with shredded cheese.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes, or until cheese is melted and bubbly.
- Let it cool for a few minutes before serving. Garnish with fresh herbs if using.
