Ingredients:

  • 1 pound (450g) Italian sausage (mild or spicy, casings removed)
  • 4 medium-sized russet potatoes (about 2 pounds/900g), diced
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) shredded cheddar cheese (plus extra for topping)
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons (30ml) olive oil or melted butter
  • Chopped fresh parsley (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat.
  3. Add the Italian sausage, breaking it up with a spoon. Cook until browned and fully cooked (about 5-7 minutes). Drain excess fat.
  4. In a mixing bowl, combine diced potatoes, garlic powder, onion powder, salt, and pepper. Toss well.
  5. In the baking dish, layer half of the seasoned potatoes.
  6. Evenly distribute the cooked sausage over the first layer of potatoes.
  7. Layer the remaining potatoes on top of the sausage.
  8. In the mixing bowl, whisk together heavy cream, cheddar cheese, and half of the Parmesan cheese. Pour the mixture over the casserole.
  9. Sprinkle the remaining cheese on top.
  10. Bake in the preheated oven for 25-30 minutes until golden and bubbly, and potatoes are tender (test with a fork).
  11. Remove from oven and let cool slightly. Garnish with parsley before serving.
