Ingredients:
- 1 pound (450g) Italian sausage (mild or spicy, casings removed)
- 4 medium-sized russet potatoes (about 2 pounds/900g), diced
- 1 cup (240ml) heavy cream
- 1 cup (100g) shredded cheddar cheese (plus extra for topping)
- 1/2 cup (50g) grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons (30ml) olive oil or melted butter
- Chopped fresh parsley (optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat.
- Add the Italian sausage, breaking it up with a spoon. Cook until browned and fully cooked (about 5-7 minutes). Drain excess fat.
- In a mixing bowl, combine diced potatoes, garlic powder, onion powder, salt, and pepper. Toss well.
- In the baking dish, layer half of the seasoned potatoes.
- Evenly distribute the cooked sausage over the first layer of potatoes.
- Layer the remaining potatoes on top of the sausage.
- In the mixing bowl, whisk together heavy cream, cheddar cheese, and half of the Parmesan cheese. Pour the mixture over the casserole.
- Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 25-30 minutes until golden and bubbly, and potatoes are tender (test with a fork).
- Remove from oven and let cool slightly. Garnish with parsley before serving.
