Ingredients:
- 2 lbs (900g) russet potatoes, peeled and cubed
- 4 oz (115g) cream cheese, softened
- ½ cup (113g) sour cream
- ½ cup (57g) shredded cheddar cheese
- ¼ cup (30g) cooked bacon, crumbled (about 3-4 slices)
- ¼ cup (5g) fresh chives, finely chopped
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Additional shredded cheddar cheese (for garnish, optional)
- Additional crumbled bacon (for garnish, optional)
- Fresh chives, finely chopped (for garnish, optional)
Instructions:
- Boil potatoes in salted water until tender.
- Drain potatoes and mash until smooth. Add cream cheese, sour cream, cheddar cheese, bacon, chives, garlic powder, salt, and pepper. Mix until well combined.
- Use a cookie scoop (or a spoon) to portion out the potato mixture onto the prepared baking sheet.
- Bake in a preheated oven until golden brown and heated through.
- Sprinkle with additional cheese, bacon, and chives before serving (optional).
