Ingredients:

  • 2 lbs (900g) russet potatoes, peeled and cubed
  • 4 oz (115g) cream cheese, softened
  • ½ cup (113g) sour cream
  • ½ cup (57g) shredded cheddar cheese
  • ¼ cup (30g) cooked bacon, crumbled (about 3-4 slices)
  • ¼ cup (5g) fresh chives, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Additional shredded cheddar cheese (for garnish, optional)
  • Additional crumbled bacon (for garnish, optional)
  • Fresh chives, finely chopped (for garnish, optional)

Instructions:

  1. Boil potatoes in salted water until tender.
  2. Drain potatoes and mash until smooth. Add cream cheese, sour cream, cheddar cheese, bacon, chives, garlic powder, salt, and pepper. Mix until well combined.
  3. Use a cookie scoop (or a spoon) to portion out the potato mixture onto the prepared baking sheet.
  4. Bake in a preheated oven until golden brown and heated through.
  5. Sprinkle with additional cheese, bacon, and chives before serving (optional).
