Ingredients:
- 2 cups all-purpose flour (250g)
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ cup unsalted butter, chilled and cubed (115g)
- ½ cup grated Parmesan cheese (50g)
- ½ cup ice water (120ml)
- 1 cup shredded mozzarella cheese (100g)
- ½ cup cooked and crumbled Italian sausage (75g)
- ¼ cup sliced pepperoni (40g)
- 2 tablespoons chopped fresh basil or 1 tablespoon dried Italian herbs
- 1 teaspoon garlic powder
- Pinch of crushed red pepper flakes (optional)
Instructions:
- In a mixing bowl, whisk flour, baking powder, and salt.
- Cut in chilled butter until mixture resembles coarse crumbs.
- Stir in Parmesan cheese, then gradually add ice water until a dough forms.
- Shape into a ball, wrap in plastic, and chill in the refrigerator for 30 minutes.
- In a bowl, combine mozzarella, sausage, pepperoni, herbs, garlic powder, and red pepper flakes.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out chilled dough on a floured surface to about ¼-inch thick.
- Use a cookie cutter to cut out circles. Place a spoonful of filling in the center of each circle.
- Fold the dough over the filling, sealing edges with a fork.
- Arrange on the baking sheet and brush tops with melted butter (optional).
- Bake for 15-20 minutes or until golden brown.
- Allow cooling slightly before serving. Enjoy them warm!
