Ingredients:

  • 2 cups all-purpose flour (250g)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup unsalted butter, chilled and cubed (115g)
  • ½ cup grated Parmesan cheese (50g)
  • ½ cup ice water (120ml)
  • 1 cup shredded mozzarella cheese (100g)
  • ½ cup cooked and crumbled Italian sausage (75g)
  • ¼ cup sliced pepperoni (40g)
  • 2 tablespoons chopped fresh basil or 1 tablespoon dried Italian herbs
  • 1 teaspoon garlic powder
  • Pinch of crushed red pepper flakes (optional)

Instructions:

  1. In a mixing bowl, whisk flour, baking powder, and salt.
  2. Cut in chilled butter until mixture resembles coarse crumbs.
  3. Stir in Parmesan cheese, then gradually add ice water until a dough forms.
  4. Shape into a ball, wrap in plastic, and chill in the refrigerator for 30 minutes.
  5. In a bowl, combine mozzarella, sausage, pepperoni, herbs, garlic powder, and red pepper flakes.
  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Roll out chilled dough on a floured surface to about ¼-inch thick.
  8. Use a cookie cutter to cut out circles. Place a spoonful of filling in the center of each circle.
  9. Fold the dough over the filling, sealing edges with a fork.
  10. Arrange on the baking sheet and brush tops with melted butter (optional).
  11. Bake for 15-20 minutes or until golden brown.
  12. Allow cooling slightly before serving. Enjoy them warm!
