Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • 1 cup (100g) shredded mozzarella cheese
  • ½ cup (50g) grated Parmesan cheese
  • 1 large egg
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet or muffin tin with parchment paper.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, cream the softened butter until light and fluffy.
  5. Gradually add the dry mixture to the creamed butter, stirring until just combined.
  6. Fold in mozzarella and Parmesan cheeses.
  7. In a small bowl, combine minced garlic, parsley, olive oil, and garlic powder.
  8. Add the egg to the mixture and stir until evenly distributed.
  9. Using a spoon, scoop the mixture into the prepared baking sheet/muffin tin.
  10. Gently press a small amount of garlic mixture on top of each bite.
  11. Bake for 20 minutes or until golden brown.
  12. Allow to cool slightly before serving.
