Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup broccoli florets
  • 1 cup bell peppers, diced
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine chicken pieces with salt, pepper, and garlic powder.
  3. In a separate bowl, toss broccoli, bell peppers, and cherry tomatoes with olive oil, then spread them evenly in the baking dish.
  4. Place seasoned chicken pieces over the veggies in the baking dish.
  5. In a saucepan, heat heavy cream over medium heat. Whisk in cheddar, Parmesan, and Italian herbs until melted and smooth.
  6. Pour the cheese sauce over chicken and veggies evenly.
  7. Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and bubbly.
  8. Let rest for a few minutes, then serve hot.
