Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 cup broccoli florets
- 1 cup bell peppers, diced
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian herbs
Instructions:
- Preheat the oven to 400°F (200°C).
- In a bowl, combine chicken pieces with salt, pepper, and garlic powder.
- In a separate bowl, toss broccoli, bell peppers, and cherry tomatoes with olive oil, then spread them evenly in the baking dish.
- Place seasoned chicken pieces over the veggies in the baking dish.
- In a saucepan, heat heavy cream over medium heat. Whisk in cheddar, Parmesan, and Italian herbs until melted and smooth.
- Pour the cheese sauce over chicken and veggies evenly.
- Bake in the preheated oven for 20 minutes, or until the chicken is cooked through and bubbly.
- Let rest for a few minutes, then serve hot.
