Ingredients:
- 1 lb ground chicken
- 1/2 lb ground pork (or turkey)
- 1 cup breadcrumbs (preferably seasoned)
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 2 large eggs
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp dried thyme
- Salt and pepper to taste
- - For the Filling:
- - 4 oz sliced ham (deli-style)
- - 4 oz Swiss cheese (sliced or shredded)
- - For the Creamy Mushroom Sauce:
- - 2 tbsp butter
- - 8 oz mushrooms, sliced
- - 2 cloves garlic, minced
- - 1 cup heavy cream or sour cream
- - Salt and pepper to taste
- - Fresh parsley for garnish
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine ground chicken, ground pork, breadcrumbs, Parmesan cheese, milk, eggs, minced garlic, onion powder, thyme, salt and pepper. Mix until just combined; do not overmix.
- Lay out a piece of parchment paper on your countertop. Transfer half of the meat mixture onto the parchment paper and shape it into a rectangle about 9x12 inches, about ½ inch thick.
- Layer slices of ham evenly over the meat mixture.
- Next layer on slices of Swiss cheese.
- Using the parchment paper to help you roll it up tightly from one end to another like sushi; pinch ends closed.
- Place seam-side down in a greased baking dish or lined baking sheet.
- Bake in preheated oven for 45 minutes, or until internal temperature reaches 165°F (74°C) using an instant-read thermometer.
