Ingredients:

  • 1 lb ground chicken
  • 1/2 lb ground pork (or turkey)
  • 1 cup breadcrumbs (preferably seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 2 large eggs
  • 3 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • - For the Filling:
  • - 4 oz sliced ham (deli-style)
  • - 4 oz Swiss cheese (sliced or shredded)
  • - For the Creamy Mushroom Sauce:
  • - 2 tbsp butter
  • - 8 oz mushrooms, sliced
  • - 2 cloves garlic, minced
  • - 1 cup heavy cream or sour cream
  • - Salt and pepper to taste
  • - Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground chicken, ground pork, breadcrumbs, Parmesan cheese, milk, eggs, minced garlic, onion powder, thyme, salt and pepper. Mix until just combined; do not overmix.
  3. Lay out a piece of parchment paper on your countertop. Transfer half of the meat mixture onto the parchment paper and shape it into a rectangle about 9x12 inches, about ½ inch thick.
  4. Layer slices of ham evenly over the meat mixture.
  5. Next layer on slices of Swiss cheese.
  6. Using the parchment paper to help you roll it up tightly from one end to another like sushi; pinch ends closed.
  7. Place seam-side down in a greased baking dish or lined baking sheet.
  8. Bake in preheated oven for 45 minutes, or until internal temperature reaches 165°F (74°C) using an instant-read thermometer.
