Ingredients:

  • 3 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups cooked rice (white or brown)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers or breadcrumbs
  • 2 tablespoons unsalted butter, melted

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, frozen vegetables, cooked rice, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  3. Stir until all ingredients are thoroughly combined.
  4. Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  5. Sprinkle shredded cheddar cheese evenly over the top.
  6. In a small bowl, mix crushed crackers or breadcrumbs with melted butter, then sprinkle over the cheese layer.
  7. Place in the preheated oven and bake for 30-35 minutes, or until bubbly and golden on top.
  8. Let cool for 5-10 minutes before serving.
