Ingredients:

  • 2 cups cooked chicken, shredded
  • 4 cups fresh broccoli florets
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon dried parsley (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the casserole dish: Grease with cooking spray or butter.
  3. Cook the broccoli: Steam or boil until bright green and tender, about 3-5 minutes. Drain and set aside.
  4. In a bowl, mix together the shredded chicken, cooked broccoli, cream, cheddar cheese, mozzarella cheese, cream cheese, garlic powder, onion powder, salt, and pepper until well combined.
  5. Pour the chicken and broccoli mixture into the prepared casserole dish, spreading it evenly.
  6. In a separate bowl, mix the panko breadcrumbs, melted butter, and dried parsley (if using).
  7. Evenly sprinkle the breadcrumb mixture over the chicken and broccoli mixture.
  8. Place in the preheated oven and bake for 25-30 minutes, until bubbly and the top is golden brown.
  9. Allow to rest for 5 minutes before serving.
