  • 1 cup shredded mozzarella cheese

  • 1 teaspoon dried Italian herbs
  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 1 cup frozen peas
  • 2 cups fresh spinach, roughly chopped
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prep the Ingredients: Dice chicken, chop onion, and bell pepper, and prepare other vegetables.
  2. Sauté Chicken: Heat olive oil in a large skillet over medium heat. Add diced chicken, season with garlic powder, salt, and pepper. Cook until golden brown, about 7-8 minutes.
  3. Add Vegetables: Stir in the chopped onion and bell pepper; sauté until soft, about 5 minutes. Add frozen peas and spinach, stirring until spinach wilts.
  4. Create the Cheesy Sauce: Pour in chicken broth and heavy cream; bring to a simmer. Lower the heat and mix in cheddar and mozzarella cheese, paprika, and Italian herbs.
  5. Combine and Serve: Fold the chicken and vegetable mixture into the cheese sauce until well combined. Let simmer for an additional 2-3 minutes to thicken slightly.
