Ingredients:

  • 1 medium ripe pineapple, peeled, cored, and cut into wedges (approximately 4 cups or 600 grams)
  • 1 tablespoon unsalted butter (14 grams)
  • 1 tablespoon brown sugar (12 grams)
  • 1 cup granulated sugar (200 grams)
  • 6 tablespoons unsalted butter (84 grams), cut into pieces
  • 1/2 cup heavy cream (120 ml)
  • 1 teaspoon vanilla extract (5 ml)
  • Pinch of salt

Instructions:

  1. Trim and cut the pineapple into wedges or bite-sized chunks.
  2. Melt the butter in a large skillet over medium heat.
  3. Add pineapple and sprinkle with brown sugar.
  4. Sauté for 5-7 minutes until caramelized and golden, stirring occasionally.
  5. In a saucepan, heat sugar over medium heat, stirring gently until melted and amber in color.
  6. Carefully add butter and stir until melted.
  7. Gradually whisk in heavy cream, stirring continuously to blend.
  8. Stir in vanilla extract and a pinch of salt.
  9. Drizzle caramel sauce over sautéed pineapple.
  10. Serve warm, garnished as desired.
