Ingredients:
- 1 medium ripe pineapple, peeled, cored, and cut into wedges (approximately 4 cups or 600 grams)
- 1 tablespoon unsalted butter (14 grams)
- 1 tablespoon brown sugar (12 grams)
- 1 cup granulated sugar (200 grams)
- 6 tablespoons unsalted butter (84 grams), cut into pieces
- 1/2 cup heavy cream (120 ml)
- 1 teaspoon vanilla extract (5 ml)
- Pinch of salt
Instructions:
- Trim and cut the pineapple into wedges or bite-sized chunks.
- Melt the butter in a large skillet over medium heat.
- Add pineapple and sprinkle with brown sugar.
- Sauté for 5-7 minutes until caramelized and golden, stirring occasionally.
- In a saucepan, heat sugar over medium heat, stirring gently until melted and amber in color.
- Carefully add butter and stir until melted.
- Gradually whisk in heavy cream, stirring continuously to blend.
- Stir in vanilla extract and a pinch of salt.
- Drizzle caramel sauce over sautéed pineapple.
- Serve warm, garnished as desired.
