Ingredients:

  • 2 cups (250g) all-purpose flour, plus more for dusting
  • 1/2 cup (100g) packed light brown sugar
  • 1 cup (226g) unsalted butter, very cold and cut into cubes
  • 1/4 teaspoon (1.5g) salt
  • 1 cup (200g) packed light brown sugar
  • 2/3 cup (151g) unsalted butter
  • 1/4 cup (60ml) light corn syrup
  • 2 tablespoons (30ml) heavy cream
  • 1/4 teaspoon (1.5g) salt
  • 2 cups (approx. 250g) salted cashew halves, lightly chopped (optional)
  • 1/2 teaspoon (2.5ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving overhang on sides.
  2. Combine flour, brown sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press mixture evenly into prepared pan. Bake until lightly golden.
  4. Combine brown sugar, butter, corn syrup, cream, and salt in a saucepan.
  5. Bring to a boil over medium heat, stirring constantly. Boil gently for 2 minutes, stirring constantly, until thickened.
  6. Remove from heat, stir in vanilla extract and cashews.
  7. Pour caramel mixture evenly over baked crust. Return to oven and bake until caramel is bubbling and golden.
  8. Let cool completely in the pan. Chill in refrigerator for at least 1 hour (or freezer for 30mins) for easier slicing.
