Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting
- 1/2 cup (100g) packed light brown sugar
- 1 cup (226g) unsalted butter, very cold and cut into cubes
- 1/4 teaspoon (1.5g) salt
- 1 cup (200g) packed light brown sugar
- 2/3 cup (151g) unsalted butter
- 1/4 cup (60ml) light corn syrup
- 2 tablespoons (30ml) heavy cream
- 1/4 teaspoon (1.5g) salt
- 2 cups (approx. 250g) salted cashew halves, lightly chopped (optional)
- 1/2 teaspoon (2.5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving overhang on sides.
- Combine flour, brown sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
- Press mixture evenly into prepared pan. Bake until lightly golden.
- Combine brown sugar, butter, corn syrup, cream, and salt in a saucepan.
- Bring to a boil over medium heat, stirring constantly. Boil gently for 2 minutes, stirring constantly, until thickened.
- Remove from heat, stir in vanilla extract and cashews.
- Pour caramel mixture evenly over baked crust. Return to oven and bake until caramel is bubbling and golden.
- Let cool completely in the pan. Chill in refrigerator for at least 1 hour (or freezer for 30mins) for easier slicing.
