Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each)
- 1 teaspoon salt (plus more to taste)
- ½ teaspoon black pepper (plus more to taste)
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 8 oz (225g) fresh mozzarella cheese, sliced (about ¼ inch/6mm thick)
- 2 medium tomatoes, sliced (about ¼ inch/6mm thick)
- ½ cup (loosely packed) fresh basil leaves
- 2 tablespoons balsamic glaze (plus more for serving)
- Toothpicks or kitchen twine (to secure)
Instructions:
- Preheat oven to 375°F (190°C).
- Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- In a small bowl, combine salt, pepper, and Italian seasoning.
- Season the outside and inside of each chicken breast with the seasoning mixture.
- Place 1-2 slices of mozzarella, 1-2 slices of tomato, and a few basil leaves inside each pocket.
- Drizzle a small amount of balsamic glaze inside each pocket (optional).
- Use toothpicks or kitchen twine to close the pockets and keep the filling inside during cooking.
- Heat olive oil in the oven-safe skillet over medium-high heat.
- Sear each chicken breast for 2-3 minutes per side, until golden brown.
- Transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C) using a meat thermometer inserted into the thickest part of the breast.
- Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
- Drizzle with extra balsamic glaze before serving. Remove toothpicks/twine before serving.
