Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz/170g each)
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper (plus more to taste)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 8 oz (225g) fresh mozzarella cheese, sliced (about ¼ inch/6mm thick)
  • 2 medium tomatoes, sliced (about ¼ inch/6mm thick)
  • ½ cup (loosely packed) fresh basil leaves
  • 2 tablespoons balsamic glaze (plus more for serving)
  • Toothpicks or kitchen twine (to secure)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. In a small bowl, combine salt, pepper, and Italian seasoning.
  4. Season the outside and inside of each chicken breast with the seasoning mixture.
  5. Place 1-2 slices of mozzarella, 1-2 slices of tomato, and a few basil leaves inside each pocket.
  6. Drizzle a small amount of balsamic glaze inside each pocket (optional).
  7. Use toothpicks or kitchen twine to close the pockets and keep the filling inside during cooking.
  8. Heat olive oil in the oven-safe skillet over medium-high heat.
  9. Sear each chicken breast for 2-3 minutes per side, until golden brown.
  10. Transfer the skillet to the preheated oven.
  11. Bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C) using a meat thermometer inserted into the thickest part of the breast.
  12. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
  13. Drizzle with extra balsamic glaze before serving. Remove toothpicks/twine before serving.
