Ingredients:

  • 1 pound bacon or sausage, cooked and crumbled (450g)
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 red bell pepper, diced (about 1 cup)
  • 1 green bell pepper, diced (about 1 cup)
  • 1 pound baby potatoes, diced (450g)
  • 8 large eggs
  • 1/4 cup milk or cream (60ml)
  • 1 teaspoon salt (5ml)
  • 1/2 teaspoon black pepper (2.5ml)
  • 1 cup shredded cheddar cheese (115g)
  • 4 tablespoons chopped fresh chives or green onions (Optional, for garnish)

Instructions:

  1. Prep the Ingredients: Cook and crumble the bacon or sausage. Dice the onion, bell peppers, and potatoes into small, even pieces.
  2. Whisk the Eggs: In a large bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined.
  3. Assemble the Foil Packets: Lay out the four sheets of foil. Divide the potatoes, onions, and peppers evenly among the foil sheets, placing them in the center. Top with the cooked bacon or sausage. Pour the egg mixture over the vegetables and meat in each packet. Sprinkle with cheddar cheese.
  4. Seal the Foil Packets: Fold the foil over the ingredients, creating a tight, sealed packet. Crimp the edges to prevent leaks.
  5. Cook over Campfire (or Grill): Place the foil packets directly on hot coals or a grill grate over medium heat. Cook for 20-25 minutes, flipping halfway through, until the potatoes are tender and the eggs are cooked through. Check for doneness by carefully opening one packet.
  6. Serve & Enjoy: Carefully open the foil packets (be careful of steam!). Garnish with fresh chives or green onions, if desired. Serve immediately.
