Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound breakfast sausage, removed from casing (450g)
  • 1/2 cup diced onion (75g)
  • 1/2 cup diced bell pepper (any color) (75g)
  • 6 large eggs (US large)
  • 1/4 cup milk (60 ml)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (115g)
  • 4 large flour tortillas
  • Aluminum foil for wrapping

Instructions:

  1. Sauté sausage, onions and bell pepper. Set aside.
  2. Whisk together eggs, milk, salt, and pepper.
  3. Combine the sausage mixture and egg mixture. Refrigerate in a container for easy transport.
  4. Shred Cheese at home for ease on the campsite.
  5. Heat skillet over campfire (medium heat).
  6. Scramble egg and sausage mixture in the skillet, stirring occasionally, until cooked through.
  7. Warm tortillas slightly over the fire (optional, for pliability).
  8. Divide egg mixture evenly among the tortillas.
  9. Top with shredded cheese.
  10. Fold the sides of the tortilla in, then roll up tightly.
  11. Wrap each burrito tightly in aluminum foil.
  12. Place wrapped burritos near the campfire (not directly on the flames) for 5-10 minutes, turning occasionally, until heated through and cheese is melted. Be careful not to burn the foil.
  13. Let cool slightly before unwrapping and enjoying.
