Ingredients:

  • 8 Chicken Drumsticks (about 2-2.5 lbs / 900g-1.1kg)
  • 2 tablespoons Olive Oil (30ml)
  • 1 tablespoon Lemon Juice (15ml)
  • 1 tablespoon Paprika (Smoked or Sweet) (15ml)
  • 1 teaspoon Garlic Powder (5ml)
  • 1 teaspoon Onion Powder (5ml)
  • 1 teaspoon Dried Thyme (5ml)
  • 1 teaspoon Dried Oregano (5ml)
  • ¼ - ½ teaspoon Cayenne Pepper (1-2.5ml)
  • 1 teaspoon Salt (5ml)
  • ½ teaspoon Black Pepper (2.5ml)

Instructions:

  1. Pat the drumsticks dry with paper towels. This ensures a good sear.
  2. In a small bowl, whisk together all the Cajun seasoning ingredients.
  3. In a large bowl or zip-top bag, combine the drumsticks, olive oil, and lemon juice (if using). Add the Cajun seasoning and toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours, for maximum flavour.
  4. Preheat your grill to medium heat (about 375°F / 190°C). Oil the grates to prevent sticking.
  5. Place the drumsticks on the preheated grill. Cook for 25-30 minutes, turning every 5-7 minutes to ensure even cooking and prevent burning. Use a meat thermometer to check for doneness. The internal temperature should reach 165°F (74°C) in the thickest part of the drumstick.
  6. Remove the drumsticks from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute, resulting in a juicier final product.
