Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts
  • 1 tablespoon (15ml) olive oil
  • 1/2 cup (120ml) buffalo wing sauce (Frank's RedHot)
  • 1/4 cup (60ml) cream cheese, softened
  • 1/4 cup (30g) shredded cheddar cheese
  • 2 tablespoons (30ml) blue cheese dressing (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of cayenne pepper (optional)
  • Salt and pepper to taste
  • 24 wonton wrappers
  • 2 tablespoons (30ml) olive oil (for brushing)
  • Optional: Everything bagel seasoning

Instructions:

  1. Cook the chicken breasts (boil, bake at 375°F/190°C, or poach). Shred the cooked chicken.
  2. Heat olive oil in a skillet over medium heat. Add shredded chicken, buffalo wing sauce, cream cheese, cheddar cheese, blue cheese dressing (if using), garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Cook until the cream cheese is melted and the filling is well combined.
  3. Preheat oven to 375°F (190°C). Lightly brush each side of the wonton wrappers with olive oil. Gently press each wonton wrapper into a muffin tin cup.
  4. Spoon the buffalo chicken filling into each wonton cup. Sprinkle with everything bagel seasoning, if desired.
  5. Bake for 10-12 minutes, or until the wonton wrappers are golden brown and crispy.
  6. Let cool slightly in the muffin tin before transferring to a serving plate. Serve immediately.
