Ingredients:
- 1 pound (454g) fresh or frozen blueberries
- 1/2 cup (120ml) apple cider vinegar
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) water
- 1/4 cup (30g) finely chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions:
- Chop the red onion, mince the garlic, and grate the ginger. Measure out all other ingredients.
- In a medium saucepan, combine all ingredients: blueberries, apple cider vinegar, sugar, water, red onion, garlic, ginger, cinnamon, cloves, red pepper flakes (if using), salt, and pepper.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- Reduce heat to low and simmer uncovered, stirring frequently, for about 30 minutes, or until the chutney has thickened.
- Place a dollop of blueberry chutney on a chilled plate. If it sets up quickly, it's ready.
- Remove from heat and let cool slightly. Either use immediately or transfer to sterilized jars.
