Ingredients:

  • 1 pound (454g) fresh or frozen blueberries
  • 1/2 cup (120ml) apple cider vinegar
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60ml) water
  • 1/4 cup (30g) finely chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • Pinch of black pepper

Instructions:

  1. Chop the red onion, mince the garlic, and grate the ginger. Measure out all other ingredients.
  2. In a medium saucepan, combine all ingredients: blueberries, apple cider vinegar, sugar, water, red onion, garlic, ginger, cinnamon, cloves, red pepper flakes (if using), salt, and pepper.
  3. Bring the mixture to a simmer over medium heat, stirring occasionally.
  4. Reduce heat to low and simmer uncovered, stirring frequently, for about 30 minutes, or until the chutney has thickened.
  5. Place a dollop of blueberry chutney on a chilled plate. If it sets up quickly, it's ready.
  6. Remove from heat and let cool slightly. Either use immediately or transfer to sterilized jars.
