Ingredients:

  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp (15 ml) soy sauce
  • 1 tbsp (15 ml) oyster sauce
  • 1 tbsp (15 ml) cornstarch (cornflour)
  • 1 tsp (5 ml) sesame oil
  • 1/2 tsp (2.5 ml) ground ginger
  • 1/4 tsp (1.25 ml) black pepper
  • 1/4 cup (60 ml) soy sauce
  • 2 tbsp (30 ml) oyster sauce
  • 2 tbsp (30 ml) brown sugar, packed
  • 1 tbsp (15 ml) rice vinegar (or white vinegar)
  • 1 tbsp (15 ml) cornstarch (cornflour)
  • 1/2 cup (120 ml) beef broth (or chicken broth)
  • 2 tbsp (30 ml) vegetable oil
  • 2 cloves garlic, minced
  • 1 inch (2.5 cm) ginger, minced
  • 1 head broccoli, cut into florets
  • 1/4 cup (60 ml) water

Instructions:

  1. Marinate the Beef: In a bowl, combine the sliced beef with soy sauce, oyster sauce, cornstarch, sesame oil, ginger, and pepper. Toss to coat and set aside for at least 15 minutes, or up to 30 minutes in the refrigerator.
  2. Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, rice vinegar, cornstarch, and beef broth. Set aside.
  3. Sear the Beef: Heat vegetable oil in a large skillet or wok over high heat. Add the marinated beef and sear for 2-3 minutes, until browned on all sides. Remove the beef from the pan and set aside. Don't overcrowd the pan; cook in batches if necessary.
  4. Sauté Aromatics and Broccoli: Add more vegetable oil to the pan if needed. Add the minced garlic and ginger and sauté for 30 seconds, until fragrant. Add the broccoli florets and water. Cover the pan and steam for 3-5 minutes, or until the broccoli is crisp-tender.
  5. Combine and Thicken: Pour the prepared sauce over the broccoli. Bring to a simmer and cook for 1-2 minutes, or until the sauce has thickened.
  6. Return Beef and Serve: Return the cooked beef to the pan and toss to coat with the sauce. Cook for another minute to heat through. Serve immediately.
