- 2 large eggs
- 0.5 cup vegetable oil
- 0.25 cup water
- 1 tsp pure vanilla extract
- 0.5 tsp espresso powder
- 2 tbsp full-fat cream cheese, softened
- 0.25 tsp fine sea salt
- 12 oz dark chocolate melting wafers
- 1 tsp coconut oil
- 1 tsp flaky sea salt for topping
Instructions:
- Preheat your oven and prepare the brownie mix using the eggs, vegetable oil, water, vanilla, and espresso powder according to the fudgy instructions.
- Bake the brownies in a parchment-lined 9x9 inch pan, removing them 2 minutes before the recommended time to ensure a moist, underdone center.
- While still slightly warm, crumble the brownies into a food processor or large bowl.
- Add the softened cream cheese and fine sea salt; process or mix until the crumbs form a dense, cohesive dough.
- Using a small cookie scoop, portion the dough and roll into 1-inch balls. Place on a parchment-lined tray and chill for 15 minutes.
- Melt the chocolate wafers and coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
- Using a dipping tool or fork, submerge each chilled brownie ball into the chocolate, let the excess drip off, and return to the parchment paper.
- Immediately sprinkle with flaky sea salt and allow to set at room temperature until the shell is firm.
