Ingredients:

  • 1 ½ cups Cottage Cheese (4% Milkfat recommended)
  • 2 cups Mixed Fresh Berries (Strawberries, Blueberries, Raspberries)
  • ¼ cup Sliced or Slivered Almonds
  • 1 tablespoon Fresh Mint Leaves, finely chopped
  • 1 teaspoon Honey or Maple Syrup
  • ½ teaspoon Lemon Zest
  • Pinch of Fine Sea Salt
  • 1 teaspoon Chia Seeds or Hemp Hearts (optional)

Instructions:

  1. Place almonds in a small, dry skillet over medium-low heat. Toast gently, stirring constantly, until fragrant and lightly browned (about 3-5 minutes). Remove immediately to a plate to cool completely.
  2. Ensure all berries are washed and patted completely dry. Halve or quarter larger strawberries.
  3. In the mixing bowl, combine the cottage cheese, honey/maple syrup, lemon zest, and a tiny pinch of salt. Stir gently until just combined. Avoid overmixing.
  4. Add about two-thirds (2/3) of the prepared berries and half (1/2) of the toasted almonds into the cottage cheese mixture. Fold very carefully using a spatula, just until distributed.
  5. Divide the salad between two bowls. Top each serving with the remaining fresh berries, the rest of the toasted almonds, and a sprinkle of fresh mint.
  6. Serve immediately for the best texture contrast.
