Ingredients:
- 1 ½ cups Cottage Cheese (4% Milkfat recommended)
- 2 cups Mixed Fresh Berries (Strawberries, Blueberries, Raspberries)
- ¼ cup Sliced or Slivered Almonds
- 1 tablespoon Fresh Mint Leaves, finely chopped
- 1 teaspoon Honey or Maple Syrup
- ½ teaspoon Lemon Zest
- Pinch of Fine Sea Salt
- 1 teaspoon Chia Seeds or Hemp Hearts (optional)
Instructions:
- Place almonds in a small, dry skillet over medium-low heat. Toast gently, stirring constantly, until fragrant and lightly browned (about 3-5 minutes). Remove immediately to a plate to cool completely.
- Ensure all berries are washed and patted completely dry. Halve or quarter larger strawberries.
- In the mixing bowl, combine the cottage cheese, honey/maple syrup, lemon zest, and a tiny pinch of salt. Stir gently until just combined. Avoid overmixing.
- Add about two-thirds (2/3) of the prepared berries and half (1/2) of the toasted almonds into the cottage cheese mixture. Fold very carefully using a spatula, just until distributed.
- Divide the salad between two bowls. Top each serving with the remaining fresh berries, the rest of the toasted almonds, and a sprinkle of fresh mint.
- Serve immediately for the best texture contrast.
