Ingredients:

  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 8 slices sourdough bread
  • 8 slices cheddar cheese
  • 1/2 red onion, thinly sliced
  • 2 tablespoons unsalted butter, at room temperature
  • Optional toppings: pickled jalapeños, cilantro

Instructions:

  1. In a medium bowl, mix the shredded chicken with BBQ sauce until fully combined. Adjust sauce quantity for desired moisture.
  2. Lay out 4 slices of bread. On each slice, layer: 1 slice of cheese, a quarter of the BBQ chicken mixture, some red onion slices, optional toppings if desired, and 1 more slice of cheese. Top each with the remaining bread slices.
  3. Spread butter evenly on the outer sides of each assembled sandwich.
  4. Heat a large skillet over medium heat. Place sandwiches in the skillet, butter side down. Cook for 3-4 minutes until golden brown. Flip sandwiches and cook for another 3-4 minutes, pressing gently to ensure even cooking and melting cheese.
  5. Allow sandwiches to rest for 1 minute before cutting in half. Serve hot with a drizzle of extra BBQ sauce, if desired.
