Ingredients:

  • 4 boneless, skinless chicken breasts (approximately 6 oz / 170g each)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • ½ teaspoon garlic powder (2.5 ml)
  • ½ teaspoon smoked paprika (2.5 ml)
  • Salt and freshly ground black pepper, to taste
  • Juice of ½ lemon (optional)
  • 1 tablespoon paprika (15 ml)
  • 1 teaspoon garlic powder (5 ml)
  • 1 teaspoon onion powder (5 ml)
  • 1 teaspoon dried oregano (5 ml)
  • 1 teaspoon dried thyme (5 ml)
  • ½ teaspoon cayenne pepper (2.5 ml)
  • ½ teaspoon black pepper (2.5 ml)
  • ½ teaspoon salt (2.5 ml)

Instructions:

  1. Pat the chicken breasts dry with paper towels. Place each breast between two sheets of plastic wrap and pound to an even ½-inch thickness using a meat mallet or rolling pin.
  2. In a small mixing bowl, combine paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, and salt. Whisk to ensure everything is evenly distributed.
  3. Rub the chicken breasts with olive oil. Sprinkle evenly with the Cajun seasoning mixture, pressing gently to adhere. Season with additional salt and pepper to taste.
  4. Heat the skillet over medium-high heat. Carefully place the seasoned chicken breasts in the hot skillet, ensuring they aren't overcrowded.
  5. Cook for 5-7 minutes per side, or until golden brown and cooked through. Use an instant-read thermometer to ensure the internal temperature reaches 165°F (74°C).
  6. Remove the chicken from the skillet and place it on a clean plate. Let it rest for 5 minutes before slicing. Squeeze fresh lemon juice over the chicken, if desired.
  7. Slice the chicken and serve immediately. Cajun chicken recipe Easy Cajun.
