Ingredients:

  • 180g Old Fashioned Rolled Oats
  • 1 tsp Ground Cinnamon
  • 0.5 tsp Sea Salt
  • 0.5 tsp Baking Powder
  • 3 large overripe Bananas (approx. 405g)
  • 125g Creamy Natural Peanut Butter
  • 1 tsp Pure Vanilla Extract
  • 2 tbsp Honey or Maple Syrup
  • 60g Dark Chocolate Chips
  • 30g Chopped Walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C) and line your 8x8 inch square baking pan with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until they reach a liquid, soup-like consistency with minimal lumps.
  3. Add the peanut butter, vanilla, and sweetener to the bananas. Whisk vigorously for 60 seconds until the mixture lightens in color and emulsifies into a thick caramel-like consistency.
  4. Add the oats, cinnamon, salt, and baking powder directly into the wet mixture. Fold with a spatula until every oat is thoroughly coated.
  5. Let the mixture sit for 5 minutes to allow the oats to hydrate and absorb moisture. Fold in the dark chocolate chips and chopped walnuts.
  6. Transfer the mixture to the prepared pan, smoothing the top. Bake for 25 minutes until the edges are caramelized and the center is set but soft.
  7. Allow to cool completely in the pan before slicing into 12 bars to ensure the structural integrity is maintained.
