Ingredients:

  • 2 large ripe bananas, mashed (approx. 240g / 8.5 oz)
  • 1/4 cup unsweetened applesauce (60 ml / 2 fl oz)
  • 2 tablespoons honey or maple syrup (30 ml / 1 fl oz)
  • 1 teaspoon vanilla extract (5 ml / 0.17 fl oz)
  • 1/2 teaspoon ground cinnamon (2.5 ml / 0.08 fl oz)
  • 1/4 teaspoon salt (1.25 ml / 0.04 fl oz)
  • 1 1/2 cups rolled oats (not instant) (135g / 4.75 oz)
  • 1/4 cup chopped walnuts or pecans (optional) (30g / 1 oz)

Instructions:

  1. Preheat oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas with a fork until smooth.
  3. Add applesauce, honey (or maple syrup), vanilla extract, cinnamon, and salt to the mashed bananas. Mix well.
  4. Stir in the rolled oats until just combined. Don’t overmix!
  5. If using, gently fold in the chopped walnuts or pecans.
  6. Drop rounded tablespoons of the cookie dough onto the prepared baking sheet, leaving some space between each cookie.
  7. Gently flatten each cookie with the back of a spoon.
  8. Bake for 12-15 minutes, or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
