Ingredients:
- 2 large ripe bananas, mashed (approx. 240g / 8.5 oz)
- 1/4 cup unsweetened applesauce (60 ml / 2 fl oz)
- 2 tablespoons honey or maple syrup (30 ml / 1 fl oz)
- 1 teaspoon vanilla extract (5 ml / 0.17 fl oz)
- 1/2 teaspoon ground cinnamon (2.5 ml / 0.08 fl oz)
- 1/4 teaspoon salt (1.25 ml / 0.04 fl oz)
- 1 1/2 cups rolled oats (not instant) (135g / 4.75 oz)
- 1/4 cup chopped walnuts or pecans (optional) (30g / 1 oz)
Instructions:
- Preheat oven to 350°F (175°C) and line a cookie sheet with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add applesauce, honey (or maple syrup), vanilla extract, cinnamon, and salt to the mashed bananas. Mix well.
- Stir in the rolled oats until just combined. Don’t overmix!
- If using, gently fold in the chopped walnuts or pecans.
- Drop rounded tablespoons of the cookie dough onto the prepared baking sheet, leaving some space between each cookie.
- Gently flatten each cookie with the back of a spoon.
- Bake for 12-15 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
