Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg, lightly beaten
  • 1 cup (240ml) milk
  • 2 tablespoons (30ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ripe banana, mashed
  • 1/2 cup (50g) chopped walnuts or pecans

Instructions:

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together egg, milk, oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; a few lumps are okay.
  4. Gently fold in the mashed banana and chopped nuts.
  5. Heat a lightly oiled griddle or frying pan over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  7. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface. Flip when bubbles start to pop and the edges look set.
  8. Cook for another 1-2 minutes on the other side, until golden brown.
  9. Serve hot with your favorite toppings.
