Ingredients:
- 1 cup (120g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg, lightly beaten
- 1 cup (240ml) milk
- 2 tablespoons (30ml) vegetable oil
- 1 teaspoon vanilla extract
- 1 ripe banana, mashed
- 1/2 cup (50g) chopped walnuts or pecans
Instructions:
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together egg, milk, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; a few lumps are okay.
- Gently fold in the mashed banana and chopped nuts.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface. Flip when bubbles start to pop and the edges look set.
- Cook for another 1-2 minutes on the other side, until golden brown.
- Serve hot with your favorite toppings.
