Ingredients:
- 1 cup Old-fashioned rolled oats
- 1 cup Milk (Dairy or Non-Dairy)
- 1 medium Very Ripe Banana, mashed
- 2 Tablespoons Chia Seeds
- 2 Tablespoons Maple Syrup or Brown Sugar
- 1 teaspoon Pure Vanilla Extract
- 1/2 teaspoon Ground Cinnamon
- 1/8 teaspoon Ground Nutmeg
- Pinch Fine Sea Salt
- 1/4 cup Walnuts or Pecans, toasted and roughly chopped (for topping)
- 1/2 banana, sliced (for garnish)
Instructions:
- Mash: Peel and thoroughly mash the very ripe banana in a medium mixing bowl until it has a smooth, purée-like consistency.
- Combine Wet: Add the milk, maple syrup (or brown sugar), vanilla extract, cinnamon, nutmeg, and salt to the mashed banana. Whisk the mixture vigorously for 30–60 seconds until the spices and sweetener are dissolved and fully incorporated.
- Incorporate Dry Ingredients: Stir in the rolled oats and the chia seeds. Mix thoroughly, scraping down the sides of the bowl to ensure no dry clumps remain. Let the mixture sit for 5 minutes and then stir again to activate the chia seeds.
- Divide and Chill: Spoon the mixture evenly into two airtight containers or jars. Seal the containers and place them in the refrigerator. Chill for a minimum of 6 hours, or preferably overnight, until the mixture has thickened significantly.
- Final Prep: Before serving, lightly toast the walnuts/pecans (if not already done) in a dry pan until fragrant, then chop. If the oats are too thick, add a tablespoon or two of extra milk to achieve a creamy consistency.
- Garnish and Serve: Top each jar of oats with the toasted chopped nuts and a few fresh banana slices. Serve cold.
