Ingredients:

  • 1/2 cup Rolled Oats (Old Fashioned)
  • 1/2 cup Milk (Dairy or Non-Dairy)
  • 1 tablespoon Chia Seeds
  • 1/2 medium Ripe Banana, mashed
  • 1 teaspoon Maple Syrup (or Honey)
  • 1/2 teaspoon Vanilla Extract
  • 1/4 teaspoon Ground Cinnamon
  • Pinch of Ground Nutmeg
  • Tiny pinch of Salt
  • 1 tablespoon Chopped Walnuts or Pecans (Optional Topping)

Instructions:

  1. Mash the half banana thoroughly in the base of your sealable jar or bowl until it’s as smooth as possible.
  2. Add the milk, maple syrup, and vanilla extract to the mashed banana. Stir well to combine, breaking up any remaining banana lumps.
  3. Add the rolled oats, chia seeds, cinnamon, nutmeg, and salt into the wet mixture.
  4. Mix vigorously until everything is evenly coated and there are no dry pockets of oats hiding at the bottom.
  5. Place the lid securely on the jar or cover the bowl tightly. Refrigerate for a minimum of 6 hours, or preferably overnight.
  6. In the morning, check the texture. If it’s too thick, stir in a splash more milk until you reach your preferred consistency.
  7. Top with your toasted walnuts or pecans, an extra drizzle of maple, and enjoy this Banana Bread Overnight Oats cold.
