Ingredients:
- 1/2 cup Rolled Oats (Old Fashioned)
- 1/2 cup Milk (Dairy or Non-Dairy)
- 1 tablespoon Chia Seeds
- 1/2 medium Ripe Banana, mashed
- 1 teaspoon Maple Syrup (or Honey)
- 1/2 teaspoon Vanilla Extract
- 1/4 teaspoon Ground Cinnamon
- Pinch of Ground Nutmeg
- Tiny pinch of Salt
- 1 tablespoon Chopped Walnuts or Pecans (Optional Topping)
Instructions:
- Mash the half banana thoroughly in the base of your sealable jar or bowl until it’s as smooth as possible.
- Add the milk, maple syrup, and vanilla extract to the mashed banana. Stir well to combine, breaking up any remaining banana lumps.
- Add the rolled oats, chia seeds, cinnamon, nutmeg, and salt into the wet mixture.
- Mix vigorously until everything is evenly coated and there are no dry pockets of oats hiding at the bottom.
- Place the lid securely on the jar or cover the bowl tightly. Refrigerate for a minimum of 6 hours, or preferably overnight.
- In the morning, check the texture. If it’s too thick, stir in a splash more milk until you reach your preferred consistency.
- Top with your toasted walnuts or pecans, an extra drizzle of maple, and enjoy this Banana Bread Overnight Oats cold.
