Ingredients:
- 1 pound (454g) fresh strawberries, hulled and quartered
- 2 tablespoons (30ml) balsamic vinegar
- 1 tablespoon (15ml) honey (or maple syrup for a vegan option)
- 1/4 teaspoon freshly ground black pepper
- 4 ounces (113g) fresh goat cheese, softened (chevre)
- 2 tablespoons (30ml) heavy cream (or non-dairy alternative)
- 1 tablespoon (15ml) finely chopped fresh chives
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 24 pre-made phyllo shells (frozen or refrigerated)
- 2 tablespoons (30g) unsalted butter, melted (or olive oil)
Instructions:
- Combine strawberries, balsamic vinegar, honey, and pepper in a small saucepan. Simmer over medium heat, stirring occasionally, until the strawberries soften and the sauce slightly thickens. Remove from heat and let cool.
- In a mixing bowl, combine softened goat cheese, cream, chives, salt, and pepper. Mix well until smooth and creamy.
- Brush the inside of each phyllo cup with melted butter or olive oil.
- Spoon or pipe the goat cheese filling into each phyllo cup.
- Spoon the balsamic strawberries over the goat cheese filling. Serve immediately or chill for later.
