Ingredients:

  • 1 pound (454g) fresh strawberries, hulled and quartered
  • 2 tablespoons (30ml) balsamic vinegar
  • 1 tablespoon (15ml) honey (or maple syrup for a vegan option)
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces (113g) fresh goat cheese, softened (chevre)
  • 2 tablespoons (30ml) heavy cream (or non-dairy alternative)
  • 1 tablespoon (15ml) finely chopped fresh chives
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 24 pre-made phyllo shells (frozen or refrigerated)
  • 2 tablespoons (30g) unsalted butter, melted (or olive oil)

Instructions:

  1. Combine strawberries, balsamic vinegar, honey, and pepper in a small saucepan. Simmer over medium heat, stirring occasionally, until the strawberries soften and the sauce slightly thickens. Remove from heat and let cool.
  2. In a mixing bowl, combine softened goat cheese, cream, chives, salt, and pepper. Mix well until smooth and creamy.
  3. Brush the inside of each phyllo cup with melted butter or olive oil.
  4. Spoon or pipe the goat cheese filling into each phyllo cup.
  5. Spoon the balsamic strawberries over the goat cheese filling. Serve immediately or chill for later.
