  • 2 large eggs
  • 1 tablespoon water
  • 1 cup Italian-style breadcrumbs
  • .5 cup grated Parmesan cheese
  • .5 teaspoon garlic powder (optional)
  • .25 cup melted butter
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken: Preheat your oven to 375°F (190°C). Season both sides of the chicken breasts with salt and pepper.
  2. Set Up Breading Station: In one shallow bowl, place the flour. In another bowl, whisk together the eggs and water. In a third bowl, combine Italian breadcrumbs, grated Parmesan cheese, and garlic powder if using.
  3. Bread the Chicken: Dredge each seasoned chicken breast in flour until fully coated; shake off excess. Dip into the egg mixture next, ensuring it is fully covered. Finally, coat with the breadcrumb mixture thoroughly on both sides.
  4. Bake: Place breaded chicken breasts on a baking sheet lined with parchment paper or greased lightly. Drizzle melted butter over each piece. Bake in preheated oven for about 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and is golden brown on top.
  5. Serve: Remove from oven and let rest for a few minutes before serving. Garnish with fresh parsley if desired. Serve alongside your favorite sides such as mashed potatoes or steamed vegetables.
