Ingredients:
- 1 (8-ounce/225g) block of feta cheese, preferably Greek feta in brine
- 1 pint (approximately 500g) cherry tomatoes, halved or left whole if small
- 3 cloves garlic, minced
- 1/4 cup (60ml) extra virgin olive oil
- 1/4 teaspoon red pepper flakes (or more to taste)
- Salt and freshly ground black pepper to taste
- 2 tablespoons hot honey (recipe below or store-bought)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat the oven to 400°F (200°C/Gas Mark 6).
- In the oven-safe dish, toss the cherry tomatoes, minced garlic, olive oil, red pepper flakes, salt, and pepper.
- Place the feta block in the centre of the tomato mixture. Make sure it's slightly submerged in the oil.
- Bake for 20-25 minutes, or until the feta is softened and slightly golden, and the tomatoes have burst and softened. The tomatoes should be releasing their juices.
- While the feta is baking, combine honey and red pepper flakes in a small bowl to make hot honey (if using homemade).
- Remove from the oven and drizzle generously with hot honey. Garnish with fresh basil leaves (if using). Serve immediately with crusty bread, crackers, or toasted pita for dipping. Enjoy the Baked Feta with Cherry Tomatoes!
