Ingredients:
- 4 medium sweet potatoes (about 2 pounds or 900 grams)
- 1/4 cup (50 grams) brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 3 tablespoons unsalted butter, melted
- 1 cup (120 grams) pecans, chopped
- 2 cups (200 grams) mini marshmallows
Instructions:
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into 1-inch (2.5 cm) cubes.
- In a mixing bowl, combine sweet potatoes, brown sugar, cinnamon, nutmeg, and melted butter. Toss to coat evenly.
- Spread the sweet potato mixture evenly on a baking sheet.
- Bake for 30 minutes, stirring halfway through until tender and caramelized.
- Remove from oven and sprinkle evenly with chopped pecans.
- Top with mini marshmallows and return to the oven for an additional 10-15 minutes or until marshmallows are golden brown.
- Let cool slightly before serving.
