Ingredients:

  • 4 medium sweet potatoes (about 2 pounds or 900 grams)
  • 1/4 cup (50 grams) brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 3 tablespoons unsalted butter, melted
  • 1 cup (120 grams) pecans, chopped
  • 2 cups (200 grams) mini marshmallows

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into 1-inch (2.5 cm) cubes.
  3. In a mixing bowl, combine sweet potatoes, brown sugar, cinnamon, nutmeg, and melted butter. Toss to coat evenly.
  4. Spread the sweet potato mixture evenly on a baking sheet.
  5. Bake for 30 minutes, stirring halfway through until tender and caramelized.
  6. Remove from oven and sprinkle evenly with chopped pecans.
  7. Top with mini marshmallows and return to the oven for an additional 10-15 minutes or until marshmallows are golden brown.
  8. Let cool slightly before serving.
