Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup vegetable oil or melted butter
  • 1 tablespoon vanilla extract
  • 1 cup chopped pecans (plus extra for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, beat the eggs. Add in the vegetable oil (or melted butter) and vanilla extract. Mix until fully blended.
  4. Gradually add the wet mixture to the dry ingredients. Stir gently until just combined—do not overmix. Fold in chopped pecans carefully.
  5. Pour batter into your prepared loaf pan and sprinkle additional chopped pecans on top if desired. Bake for approximately 55–65 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for about10 minutes before transferring to a wire rack to cool completely. If youd like to add glaze mix powdered sugar with milk/water and vanilla extract until smooth; drizzle over cooled bread before slicing.
