Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup vegetable oil or melted butter
- 1 tablespoon vanilla extract
- 1 cup chopped pecans (plus extra for topping)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, beat the eggs. Add in the vegetable oil (or melted butter) and vanilla extract. Mix until fully blended.
- Gradually add the wet mixture to the dry ingredients. Stir gently until just combined—do not overmix. Fold in chopped pecans carefully.
- Pour batter into your prepared loaf pan and sprinkle additional chopped pecans on top if desired. Bake for approximately 55–65 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for about10 minutes before transferring to a wire rack to cool completely. If youd like to add glaze mix powdered sugar with milk/water and vanilla extract until smooth; drizzle over cooled bread before slicing.
