- 1 cup (240g) ricotta cheese, drained if watery
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- Zest of 1 medium orange
- 1 tablespoon freshly squeezed orange juice
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (120g) powdered sugar (for optional glaze)
- 2-3 teaspoons freshly squeezed orange juice (for optional glaze)
- Zest of 1 medium orange (for optional garnish)
Instructions:
- In a large bowl, beat together the ricotta cheese and softened butter until smooth.
- Add granulated sugar, egg, orange zest, and orange juice; mix until well combined.
- In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture; gently fold until combined.
- Cover the dough with plastic wrap and chill in the refrigerator for 30 minutes.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are lightly golden.
- Transfer cookies to a cooling rack to cool completely.
- In a small bowl, whisk together powdered sugar and orange juice until smooth. Drizzle over cooled cookies and add extra zest if desired.
