  • 2 cups buttermilk (or substitute with milk + vinegar)
  • ½ cup molasses (preferably unsulfured)

Instructions:

  1. _Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper._
  2. _In a large mixing bowl, combine the rolled oats, whole wheat flour, all-purpose flour, baking soda, and salt. Whisk together until evenly combined._
  3. _In another bowl, whisk together the buttermilk and molasses until well blended._
  4. _Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently using a wooden spoon or spatula until just combined. Do not overmix; its okay if there are some lumps._
  5. _Pour the batter into the prepared loaf pan, smoothing out the top with a spatula. If you are adding seeds, sprinkle them on top now._
  6. _Bake in preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean._
  7. _Once baked, remove from oven and let it cool in pan for about 10-15 minutes before transferring to a wire rack to cool completely._
