- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups buttermilk (or substitute with milk + vinegar)
- ½ cup molasses (preferably unsulfured)
- (Optional: Seeds for topping like sesame or sunflower seeds)
Instructions:
- _Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper._
- _In a large mixing bowl, combine the rolled oats, whole wheat flour, all-purpose flour, baking soda, and salt. Whisk together until evenly combined._
- _In another bowl, whisk together the buttermilk and molasses until well blended._
- _Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently using a wooden spoon or spatula until just combined. Do not overmix; its okay if there are some lumps._
- _Pour the batter into the prepared loaf pan, smoothing out the top with a spatula. If you are adding seeds, sprinkle them on top now._
- _Bake in preheated oven for about 45-50 minutes or until a toothpick inserted into the center comes out clean._
- _Once baked, remove from oven and let it cool in pan for about 10-15 minutes before transferring to a wire rack to cool completely._
