Ingredients:

  • 1 cup fresh spinach, chopped (about 2 ounces)
  • ½ cup feta cheese, crumbled
  • ¼ cup cream cheese, softened
  • 1 clove garlic, minced
  • Salt and pepper to taste (about a pinch each)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, crumbled feta cheese, softened cream cheese, minced garlic, and season with salt and pepper. Mix until well combined.
  3. Lay one sheet of phyllo dough on a clean surface and lightly brush with cooking spray or melted butter. Place another sheet on top and repeat the brushing process.
  4. Once you have layered two sheets together (for sturdiness), cut them into squares approximately 3 inches by 3 inches.
  5. Gently press each square into the wells of a greased muffin tin to form little cups. Repeat this process with additional layers if desired for extra crunchiness (you can use up to three layers per cup).
  6. Spoon about one tablespoon of filling into each phyllo cup.
  7. Bake in the preheated oven for about 15-20 minutes, or until the edges are golden brown and crispy.
  8. llow cooling for about five minutes before carefully removing from the muffin tin using tongs or a fork.
