Ingredients:

  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3-4 tablespoons ice water
  • 6 large eggs
  • 1 cup milk (whole or low-fat)
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)
  • (Optional Add-ins): Vegetables: 1/2 cup spinach, chopped; 1/2 cup bell peppers, diced; 1/4 cup green onions, sliced; Cheese: 3/4 cup shredded cheese (cheddar, mozzarella, or feta); Protein: cooked bacon bits or diced ham

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Add the cold butter cubes to the bowl. Using a pastry cutter or your fingers, mix until it resembles coarse crumbs.
  3. Gradually add ice water one tablespoon at a time until dough comes together but is not sticky. You may need only three tablespoons.
  4. Form into a disc shape, wrap in plastic wrap, and refrigerate while you prepare the filling.
  5. Preheat your oven to 375°F (190°C).
  6. In another mixing bowl, whisk together eggs and milk until well combined.
  7. Season with salt, pepper, and nutmeg if using.
  8. Stir in your choice of vegetables, cheese, and protein add-ins.
  9. Roll out chilled dough on a lightly floured surface about an eighth of an inch thick.
  10. Use a round cookie cutter or glass to cut out circles from the dough that will fit into your muffin tin cups (about three inches in diameter).
  11. Press each circle into greased muffin tins gently so they fit snugly.
  12. Pour egg mixture evenly into each crust-lined muffin tin until almost full but not overflowing.
