Ingredients:
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 3-4 tablespoons ice water
- 6 large eggs
- 1 cup milk (whole or low-fat)
- Salt and pepper to taste
- Pinch of nutmeg (optional)
- (Optional Add-ins): Vegetables: 1/2 cup spinach, chopped; 1/2 cup bell peppers, diced; 1/4 cup green onions, sliced; Cheese: 3/4 cup shredded cheese (cheddar, mozzarella, or feta); Protein: cooked bacon bits or diced ham
Instructions:
- In a mixing bowl, combine flour and salt.
- Add the cold butter cubes to the bowl. Using a pastry cutter or your fingers, mix until it resembles coarse crumbs.
- Gradually add ice water one tablespoon at a time until dough comes together but is not sticky. You may need only three tablespoons.
- Form into a disc shape, wrap in plastic wrap, and refrigerate while you prepare the filling.
- Preheat your oven to 375°F (190°C).
- In another mixing bowl, whisk together eggs and milk until well combined.
- Season with salt, pepper, and nutmeg if using.
- Stir in your choice of vegetables, cheese, and protein add-ins.
- Roll out chilled dough on a lightly floured surface about an eighth of an inch thick.
- Use a round cookie cutter or glass to cut out circles from the dough that will fit into your muffin tin cups (about three inches in diameter).
- Press each circle into greased muffin tins gently so they fit snugly.
- Pour egg mixture evenly into each crust-lined muffin tin until almost full but not overflowing.
